Veg Manchurian is a popular Indo-Chinese dish. It consists of crispy fried vegetable dumplings made from chopped or grated cabbage, carrots, and beans. These veggie balls are then tossed in a savory, sweet, spicy, and tangy sauce flavored with soy sauce, garlic, ginger, and chili. 
Key Styles of Veg Manchurian
Dry Version: Coated with a thick, sticky layer of sauce. It is usually served as an appetizer or starter with toothpicks or garnishes.
Gravy Version: Served swimming in a plentiful, flavorful liquid sauce. It is commonly paired as a main course with fried rice or noodles.
Main Ingredients
Vegetable Balls: Finely minced cabbage, carrots, bell peppers, beans, and spring onions bound with a mix of cornstarch and all-purpose flour.
Manchurian Sauce: A base of minced garlic, ginger, green chilies, soy sauce, tomato ketchup, red chili sauce, and vinegar, thickened with a cornstarch slurry.
