Hakka noodles is a popular Indo-Chinese fusion dish of boiled, thin wheat noodles. They are stir-fried in a hot wok with crunchy vegetables, soy sauce, garlic, and vinegar. 
Origins and Style
Indo-Chinese Fusion: Created by Chinese immigrants who moved to Kolkata, India. They mixed traditional Chinese styles with Indian spices and bold flavors.
High Heat Cooking: Cooked fast in a hot wok to get a smoky taste called wok hei.
Mild and Savory: Less spicy than Schezwan noodles. They focus on a savory umami taste with a hint of garlic and pepper.
Key Ingredients
Noodles: Thin, unleavened wheat flour noodles that stay chewy and elastic.
Vegetables: Thin slices of cabbage, carrots, bell peppers, and onions.
