Ragda Patties (also spelled Ragda Pattice) is a popular, flavorful Indian street food snack from the states of Maharashtra and Gujarat. It is a hearty and satisfying "chaat" (savory snack) that combines a variety of textures and sweet, spicy, and tangy flavors in every bite.
- Ragda (Pea Curry): A light stew or gravy made from rehydrated dried white peas (safed matar or vatana) and mild spices. The peas are cooked until soft and slightly mashed, resulting in a thick, soupy consistency.
- Patties (Potato Cakes): These are shallow-fried or pan-fried cutlets made from mashed potatoes, sometimes mixed with breadcrumbs or poha (flattened rice) for crispiness and binding.
